Subway to start ‘tessellating’ its cheese
Subway franchisees on Thursday will begin placing triangular cheese slices on the chain’s subs. Instead of being positioned end to end with overlap, the cheese points will alternate facing up and down along your sandwich. To the geometrically inclined, the term is “tessellating” — positioning shapes in a pattern without overlap and with no gaps.

Head of Flat Out Crazy looks to expand chain
From Restaurant News | Greg Carey, president and chief operating officer of Chicago-based Flat Out Crazy Restaurant Group, says his company plans to start growing again over the next 18 months and has secured $8 million from U.S. Bank and HillStreet Fund IV to do it. The company owns Rainforest Cafe and P.F. Chang’s China Bistro, and is now targeting Texas, the Rocky Mountain states and the mid-Atlantic region for developing about six Stir Crazy casual-dining restaurants and about nine fast-casual Flat Top Grills, where guests create their own stir-frys.
McDonald’s strikes deal to expand in China

Francesca’s Restaurants says hello to Wisconsin
Francesca’s Restaurants is taking its menu on the road to Wisconsin, its first market outside of the Chicago area.
The Chicago-based chain, which has grown to 20 locations since its first Italian restaurant opened on North Clark Street in 1992, said it will open a restaurant on July 7 on Madison’s Capital Square. The eatery will operate under the name Francesca’s al Lago.
TGI Friday’s sues to block Rosemont Tilted Kilt
The casual restaurant chain TGI Friday’s Inc. has sued to stop the owner of a Rosemont development from entering into a lease with another eatery in the plaza.
Fulcrum Asset Advisors LLC’s plan to rent space to the Tilted Kilt Pub & Eatery would violate the terms of TGI Friday’s lease, the restaurant chain said in a suit filed Monday in Cook County. ‘Food police’ go after Happy Meals toys
A Washington-based consumer advocacy group threatened to sue McDonald’s Tuesday, charging that the fast food chain “unfairly and deceptively” markets toys to children through its Happy Meals.
“McDonald’s marketing has the effect of conscripting America’s children into an unpaid drone army of word-of-mouth marketers, causing them to nag their parents to bring them to McDonald’s,” Stephen Gardner of the Center for Science in the Public Interest wrote to the heads of the chain in a letter announcing the lawsuit.
